A new dessert concept will make its debut at The Avenue Madison multi-use complex this spring. ChillaBay, a dessert bar and surf-shop-themed hangout, will serve a variety of sweets, signature milkshakes, ice cream sandwiches, and more while transporting guests to the beaches of the West Coast. Construction is almost complete, and a soft opening is tentatively scheduled for late April.

Hours for the new dessert shop will be Sunday through Thursday from noon to 9 p.m. and Friday and Saturday from noon to 10 p.m. ChillaBay is in Suite B at The Avenue Madison next to Honest Coffee Roasters.

ChillaBay’s Owner and Operator, Christy Wimberly, has spent years running the popular Honest Coffee Roasters in downtown Huntsville and recently opened a second location at The Avenue Madison. As her business in Madison grew, she decided to work with members of her team to dream up a new concept centered around sweets and building community. The result? ChillaBay Dessert Bar—a chill oasis packed with signature desserts and classic treats.

“Over the years, our guests at Honest Coffee have become our friends and family,” said Christy. “When we moved to Madison, we were immediately supported by the surrounding community, local organizations, and other businesses. It wasn’t long before the team decided to invest in Madison further by creating an original concept. We wanted ChillaBay to be unique in its offerings, atmosphere, and focus. It’s exciting to bring another place where visitors can come and indulge in sweets while hanging out in a comfortable, fun setting.”

A ticket to California might cost you, but ChillaBay is conveniently located within historic downtown Madison and easily accessible from I-565. The menu is stacked with signature milkshakes, floats, and dessert classics. There’s also the option for guests to build their own cone, cup, shake, or cookie sandwich—a creative option the team calls “Choose Your Chill.” Visitors with dietary restrictions can also enjoy ChillaBay because it includes gluten-free and vegan selections as well.

“We wanted to make sure ChillaBay appealed to everyone,” said Christy. “Our new dessert bar will have vegan gelato flavors available as well as gluten-free cookies, milkshakes, floats, and toppings.”

Traditional cones and cups of ice cream can be customized and crowned with a variety of toppings like sprinkles, cookie dough bites, cotton candy crunch, and gummy bears. Chocolate lovers can enjoy The Dead Wake double chocolate milkshake with brownie bites and smooth fudge. Of course, there are plenty of tropical treats like the piña colada Escape shake or The Malibu strawberry cheesecake shake. A few float choices include the Sweet Shirley Temple, Root Beer Ripple, and a Mexican Coke float with a dash of cinnamon and cayenne pepper.

There’s even a Cold Brew Coffee float made with—you guessed it—coffee from Honest Coffee Roasters. Other specialty desserts like Cheesecake, Brownie a la Mode, and others will be provided thanks to a partnership with another local business, Little Dipper Bakery & Café.

“Little Dipper has been a partner with Honest Coffee Roasters in Huntsville and Madison for some time,” said Christy. “Our brand has always been about supporting our community and that includes other local small businesses. It’s exciting to continue that relationship and build upon it in our next endeavor.”

ChillaBay Dessert Bar will be managed by a Madison local, Gabriella Shideler. She began her career with Honest Coffee Roasters in early 2022 and jumped at the opportunity to guide a brand-new concept.

“Madison is a special city and I have the privilege of living and working within its historic downtown,” said Gabriella, Shop Manager. “I relocated to the area when Honest Coffee opened at the complex. Yes, I love my job that much. I also have high hopes for the future of our community. ChillaBay will bring a convenient space to the market where parents, kids, and teens can enjoy dessert in a one-of-a-kind atmosphere. I’m excited to be on board and can’t wait to share this concept.”

Speaking of atmosphere, ChillaBay has incorporated several statement pieces, assorted décor, and fixtures to transport guests to coastal bays, boardwalks, and beaches. Think surfboards, neon signs, colorful chairs, and island vibes. Guests will also have access to wifi and power outlets if they want to work or surf the internet as they sip on shakes. Even the in-shop music selection will encourage visitors to unwind.

“We hope ChillaBay serves as an escape where visitors can try out different desserts, catch up with friends, and take a moment to relax,” said Christy. “You may not be able to make it to the beach, but you can come to our shop. Our team will help you find the perfect treat for your taste. We’re thrilled to open our doors and welcome new friends, catch up with old ones, and introduce a place that we believe will bring a smile to many faces.
