Crunkleton Commercial Real Estate is thrilled to announce that CHOPCHOP Fresh Salads, a local fast-casual eatery focused on serving fresh, seasonal salad bowls, will be joining Merchants Square at 2615 South Memorial Parkway. After two years of serving Huntsville at its first location off University Drive, the restaurant group has decided to expand to a 1,554 square foot space between the coming Char restaurant and Brass Tap. The new site will offer additional seating for customers and introduce a select menu of local beers, kombuchas and Piper & Leaf artisanal teas. CHOPCHOP Fresh Salads is tentatively scheduled to open February 2019.

“Many people are asking for healthier options that support local producers and benefit the body,” said Yunus Hasan, co-owner of CHOPCHOP. “We saw concepts like CHOPCHOP thrive in larger cities and we decided that we could make it work for Huntsville. Since 2016, we have been expanding our menu, perfecting our food prep and requesting more local partners for our ingredients. Many of our customers asked us to open up a shop near South Huntsville. We listened, and we will be bringing the same quality food and excellent customer service to Merchants Square.”

CHOPCHOP Fresh Salads opened at University Place in October 2016. Its menu includes several signature salad bowls with various greens, warm grains and toppings. Guests can also create their own custom bowls with ingredients like kale, chicken, quinoa and dressings, which are made in-house daily. While the restaurant’s University Drive location comfortably seats 20 guests, CHOPCHOP’s second site will seat 50. Owners said this would better serve professionals who are looking to have a quick, sit-down lunch.

“Merchants Square is the perfect location for CHOPCHOP because it has great co-tenancy,” said Jim Xue, co-owner of CHOPCHOP Fresh Salads. “Many of the shops share our target demographic, and the site matches the atmosphere we were going for. We’re also able to add beer and draft kombucha to our offerings, which is a big plus for customers who are fans of local brews.”

Although CHOPCHOP does not consider itself a “health food” restaurant, it does try to make customers aware of nutritional benefits and uses organic products when they are readily available. Everything from its sleek interiors to the music played in the store is carefully chosen to elicit the vibe that owners want to associate with its tasty, garden-fresh fare. Hasan said the space at Merchants Square will serve as a blueprint for all future CHOPCHOP locations. Anusha Alapati, who served as tenant representation for the group, said the new location at Merchants Square will help CHOPCHOP reach its business goals.

This new shop will help them serve more of Huntsville and share their vision for healthy, delicious food.”
